Ingredients (8)

1.00 Tbs butter
1.00 Tbs fresh chillies — 573
1.00 onion — chopped
2.00 fresh ginger — grated
1.00 kg sweet potato — peeled and chopped
750.00 ml stock — chicken
3.00 Tbs lime juice
1.00 c milk — full cream

Method:

Heat 1 tbsp butter and 1 tbsp
olive oil in a medium saucepan
and sauté 1 chopped onion and
a sliced knob of ginger until
softened.

Add 1 kg (about 6) peeled
and chopped sweet potatoes
and fry for a few minutes more.

Add 750ml chicken stock, bring
to the boil and simmer for about
20 minutes or until the potato is
tender.

Blitz until smooth and then
stir in the juice of 1½ limes
(about 3 tbsp), a finely grated
knob of ginger and a cup of
full-cream organic milk.

Season to taste and serve with
lots of chopped fresh coriander.

On the side serve pita breads
brushed liberally with olive oil,
topped with thinly sliced garlic
and lots of sea salt flakes
and toasted until crispy.

If you are entertaining you could make
the breads from scratch using
home-made pizza dough.
