    onions, chopped
  • 6
    chillies, chopped
  • 250
    ml
    brown sugar
  • 750
    ml
    boiling water
  • 750
    ml
    red wine
  • 750
    ml
    dry white wine
  • 6
    bay leaves
  • 6
    whole cloves
 

Method

 
Brown onions in oil, add chillies and brown sugar and cook in boiling water until golden brown (about 20 minutes). Add the red and dry white wines, bay leaves and whole cloves. Cook for a further 15 minutes until it has a jam-like consistency. Cool and store in an airtight jar and use as needed. Keeps for up to a week.
