Ingredients (8)

45.00 ml fresh chillies — 573
6.00 onion — sliced
2.00 fresh chillies — deseeded, sliced
45.00 ml brown sugar — soft
30.00 ml red wine vinegar — or sherry vinegar
125.00 ml wine — white
85.00 ml water
salt — to taste

Method:

Heat oil in a pan. Add onions and chillies and sauté until onions are glossy, about 5 minutes.
Add sugar and stir until dissolved. Add remaining ingredients and cook over high heat for about 10 minutes. Reduce heat, then simmer until onions soften and get a bit gooey, 20 to 30 minutes.
Serve with roast meats, braaied lamb or beef, or with strong Cheddar cheese. For a blissful sandwich, slice cold rare roast beef thickly, place slices on crusty white or rye bread and top with cucumber and onion marmalade. Close sandwich.
Makes about 750 ml (3 cups).
