Sweet 'n sour tuna

    green peppers, seeded and diced

    onion, sliced into rings

    oil

    pineapple rings, cut into chunks (reserve the juice)

    chicken stock
  • 20
    ml
    cornflour
  • 30
    ml
    brown grape vinegar
  • 15
    ml
    soy sauce
  • 400

    tuna, drained
  • 65
    ml
    sugar
  • salt and freshly ground black pepper
 

Method

 
Sauté the green pepper and onion in the oil until tender. Add the pineapple chunks and stir-fry for an other minute. Reduce the heat and add 125 ml (1/2 c) of the reserved pineapple juice and the chicken stock. Blend the cornflour with the vinegar and soy sauce to form a smooth paste and add to the chicken stock mixture. Simmer until the sauce thickens slightly. Add the tuna and flake slightly. Season with sugar and salt and pepper to taste and simmer for another 5 minutes or until heated through. Serve with rice. Serves 4.
