Ingredients (11)

2.00 green pepper — seeded and diced
1.00 onion — sliced into rings
30.00 ml oil
410.00 g pineapple — tinned rings, chopped
125.00 ml stock — chicken
20.00 ml cornflour
30.00 ml vinegar — brown grape
15.00 ml soy sauce
400.00 g tuna — tinned and drained
65.00 ml sugar
sea salt and freshly ground black pepper

Method:

Sauté the green pepper and onion in the oil until tender. Add the pineapple chunks and stir-fry for an other minute. Reduce the heat and add 125 ml (1/2 c) of the reserved pineapple juice and the chicken stock. Blend the cornflour with the vinegar and soy sauce to form a smooth paste and add to the chicken stock mixture. Simmer until the sauce thickens slightly. Add the tuna and flake slightly. Season with sugar and salt and pepper to taste and simmer for another 5 minutes or until heated through.
Serve with rice.
