Sweet 'n sour samp and beans

  • 1
    kg
    samp and bean mix, rinsed and soaked overnight
  • salt
  • 350
    ml
    sugar
  • 200
    ml
    white grape vinegar
 

Method

 
Prepare the samp and beans as described in the basic recipe (don't add the onion mixture, nutmeg or black pepper). Simmer until nearly soft. Then add the sugar and grape vinegar and simmer until completely soft. Season with salt. Serve hot with sausages or meat. Serves 10-12.
