Sweet 'n sour ribs

    pork ribs
  • 10
    ml
    ground ginger
  • 10

    whole coriander, crushed
  • salt and pepper to taste
  • honey
  • SAUCE
  • 2
    cloves garlic, crushed
  • 1
    large red or green pepper, cut into strips
  • 1
    large carrot, cut into thin strips
  • oil
  • 500

    boiling water
  • 1
    chicken stock cube dissolved in boiling water
  • 45
    ml
    sugar
  • 45
    ml
    red wine vinegar
  • 10
    ml
    soy sauce
  • cornflour for thickening
 

Method

 
Preheat the oven to 180ºC. Season the pork ribs on both sides with ground ginger, coriander and salt and pepper and leave in the fridge overnight. Oven roast in a preheated oven until done and brush with melted honey. Return to the oven and roast until golden brown. Meanwhile stir-fry the garlic, pepper and carrot in oil until tender. Add the stock, sugar, vinegar and soy sauce and simmer slowly for 15 minutes. Thicken the sauce with a little cornflour blended to a paste with a little water and serve with the ribs that have been cut into portions. Serves 6-8.
