Ingredients (16)

MEATBALLS
1.00 kg beef mince — lean
1.00 onion — finely chopped
2.00 garlic — cloves, crushed
2.00 eggs — beaten
30.00 g breadcrumbs — white
10.00 ml gravy powder
7.00 ml salt
1.00 ml freshly ground black pepper
SAUCE
440.00 g pineapple — cut into chunks
80.00 ml marmalade
20.00 ml cornflour
15.00 ml tomato sauce
7.00 ml vinegar — white garpe
1.00 celery stalks — finely sliced
1.00 green pepper — strips
1.00 tomatoes — peeled and diced

Method:

Mix all the ingredients for the meatballs.
Divide the mixture into 4 equal parts and shape each quarter into 8 meatballs.
Arrange 8 meatballs at a time in a circle on a microwave plate. Microwave for 4 minutes, uncovered on 100 per cent power.
Turn the meatballs and microwave for another 2 minutes on 100 per cent power. Set aside.
Drain the pineapple chunks and set aside.
Add enough water to the syrup to make up 250 ml and pour into a microwaveproof dish.
Add the remaining sauce ingredients, except the vegetables, to the syrup and mix well.
Microwave for 5 minutes, uncovered, on 100 per cent power. Stir once a minute. Set aside.
Mix the celery, carrot, green pepper and tomato in a microwaveproof dish and cover with plastic wrap.
Microwave for 3 to 4 minutes on 100 per cent power until the vegetables are soft. Add the pineapple chunks and mix with the sauce.
Microwave for another 1 minute, uncovered, at 100 per cent power.
Pour the mixture over the meatballs and serve hot with rice.
