Sweet 'n sour meatballs

    celery stick, sliced thinly

    small green pepper, seeded and cut into thin strips

    tomato, skinned and diced
 

Method

 
Mix all the ingredients for the meatballs. Divide the mixture into 4 equal parts and shape each quarter into 8 meatballs. Arrange 8 meatballs at a time in a circle on a microwave plate. Microwave for 4 minutes, uncovered on 100 per cent power. Turn the meatballs and microwave for another 2 minutes on 100 per cent power. Set aside. Drain the pineapple chunks and set aside. Add enough water to the syrup to make up 250 ml and pour into a microwaveproof dish. Add the remaining sauce ingredients, except the vegetables, to the syrup and mix well. Microwave for 5 minutes, uncovered, on 100 per cent power. Stir once a minute. Set aside. Mix the celery, carrot, green pepper and tomato in a microwaveproof dish and cover with plastic wrap. Microwave for 3 to 4 minutes on 100 per cent power until the vegetables are soft. Add the pineapple chunks and mix with the sauce. Microwave for another 1 minute, uncovered, at 100 per cent power. Pour the mixture over the meatballs and serve hot with rice.
