    butter
  • 1
    large onion, sliced into rings
  • 1
    clove garlic, crushed
  • 250
    ml
    cake flour
  • salt and ground black pepper to taste
  • 500
    g
    sheep's liver (membrane and tubes removed), chopped
  • 25
    ml
    soy sauce
  • 30
    ml
    sugar
  • 125
    ml
    water
 

Method

 
Fry the onions and garlic in the butter until soft and fragrant. Season the cake flour generously with salt and pepper and transfer to a plastic bag. Add the liver pieces and shake well. Add the liver to the onion mixture in the pan and stir-fry until lightly browned on the outside. Add the remaining ingredients and bring to the boil. Reduce the heat and simmer until the liver is done and the sauce is flavoursome. Serve with mashed potatoes and vegetables.
