Sweet 'n sour cucumber

    cm
    piece of English cucumber
  • 1
    red pepper, seeded and diced
  • 10
    ml
    grated fresh ginger
  • oil
  • 5
    ml
    black peppercorns
  • 15
    ml
    brown sugar
  • 30
    ml
    brown vinegar
 

Method

 
Halve the piece of cucumber lengthwise. Halve each half and remove the seeds. Using a potato peeler, cut long, thin strips along the length of the cucumber pieces. Fry the red pepper and ginger in a little oil until tender. Add the black peppercorns, brown sugar and brown vinegar and simmer for a few minutes. Pour over the cucumber strips and leave for one hour. Serves 4-6.
