Ingredients (9)

2 cup all-purpose flour
2 tsp Baking powder
1/2 tsp salt
1 tsp cumin — seeds
2-3 green chilli — finely chopped
1 tsp garlic — cloves, grated
1 sweetcorn — creamed, tinned
1 eggs
1 Tbs fresh coriander — chopped

Method:

Mix all the ingredients in a bowl add about 1 cup of water until you have a thick batter-like consistency.

Drop teaspoons of the batter into a pot of hot oil.

Fry until puffed up and golden.

Drain well on absorbent paper.

Serve hot with a side of sweet chilli sauce.

Variations:

Add 1 cup of grated cheddar or gouda – stir into the batter just before frying.

For a meatier version add 1 cup of cooked shredded chicken.

For a vegetarian version you can add some finely chopped spinach into the batter.
