Sweet corn chillie puffs

Ingredients

  • 2
    cup
    sifted all purpose flour
  • 2
    tsp
    baking powder
  • 1/2
    tsp
    salt
  • 1
    tsp
    whole cumin (jeeroo seeds)
  • 2-3
    finely chopped green chillies (de-seed if you want a milder version)
  • 1
    tsp
    grated fresh garlic
  • 1
    can cream-style sweetcorn
  • 1
    egg
  • 1
    Tbs
    chopped coriander
 

Method

20 mins
 
Mix all the ingredients in a bowl add about 1 cup of water until you have a thick batter-like consistency.

Drop teaspoons of the batter into a pot of hot oil.

Fry until puffed up and golden.

Drain well on absorbent paper.

Serve hot with a side of sweet chilli sauce.

Variations:

Add 1 cup of grated cheddar or gouda - stir into the batter just before frying.

For a meatier version add 1 cup of cooked shredded chicken.

For a vegetarian version you can add some finely chopped spinach into the batter.
