Sweet chilli mushrooms

  • fresh button mushrooms
  • fresh pineapple, peeled and cubed
  • SWEET CHILLI SAUCE
  • 3
    chilllis, chopped (use more if desired)
  • 10
    cloves garlic, chopped (use more if desired)

    brown sugar
  • 45
    ml
    white wine
  • 750
    ml
    water
  • 45
    ml
    white vinegar

Method

 
Cover mushrooms with boiling water and leave for 2 minutes. Drain. (This will prevent their becoming leathery and shrivelled when grilled or braaied.) Thread mushrooms and pineapple onto skewers (soaked first if wood) and set aside. SWEET CHILLI SAUCE: Place all ingredients in a saucepan and bring to boil. Boil rapidly for 10 minutes. Reduce heat slightly and continue boiling lightly, uncovered, until mixture has reduced, thickened and become syrupy. Mix sauce with a little sunflower oil and use to brush mushroom and pineapple skewers. Grill or braai over medium heat, turning and basting frequently until cooked, 6 to 8 minutes. Serve with extra chilli sauce on the side. Makes about 125 ml (1/2 cup) sauce.
