Ingredients (10)

button mushrooms
pineapple — fresh, peeled and cubed
sweet chilli sauce
3.00 fresh chillies — chopped
10.00 garlic — cloves, chopped
65.00 ml brown sugar
45.00 ml wine — white
750.00 ml water
45.00 ml vinegar — white
salt

Method:

Cover mushrooms with boiling water and leave for 2 minutes. Drain. (This will prevent their becoming leathery and shrivelled when grilled or braaied.)
Thread mushrooms and pineapple onto skewers (soaked first if wood) and set aside.
SWEET CHILLI SAUCE: Place all ingredients in a saucepan and bring to boil. Boil rapidly for 10 minutes. Reduce heat slightly and continue boiling lightly, uncovered, until mixture has reduced, thickened and become syrupy.
Mix sauce with a little sunflower oil and use to brush mushroom and pineapple skewers. Grill or braai over medium heat, turning and basting frequently until cooked, 6 to 8 minutes. Serve with extra chilli sauce on the side.
Makes about 125 ml (1/2 cup) sauce.
