Sweet chilli and cashew noodle stir-fry

    sesame or sunflower oil
  • 1
    clove garlic, crushed
  • 1
    piece fresh ginger, peeled and finely sliced
  • 125
    g
    baby corn, halved lengthways
  • 200
    g
    mangetout
  • 1
    red pepper, finely sliced
  • 100
    g
    cashew nuts, toasted
  • 100
    g
    small fresh button mushrooms, halved
  • 300
    g
    cooked Chinese noodles
  • 60
    ml
    sweet chilli sauce
 

Method

10 minutes
 
Heat oil over high heat in a wok or large frying pan. Stir-fry garlic and ginger for 1 minute. Add baby corn, mangetout, peppers, cashew nuts and mushrooms, and stir-fry for 4 to 5 minutes. Add noodles and chilli sauce and stir-fry for a further 2 minutes. Season to taste and serve immediately.
