Ingredients (10)

15.00 ml sesame oil — or sunflower oil
1.00 garlic — cloves, crushed
1.00 fresh ginger — peeled, thinly sliced
125.00 g baby corn — halved lengthways
200.00 g mangetout
1.00 red pepper — finely sliced
100.00 g cashew nuts — toasted
100.00 g button mushrooms — halved
300.00 g noodles — Chinese, cooked
60.00 ml sweet chilli sauce

Method:

Heat oil over high heat in a wok or large frying pan. Stir-fry garlic and ginger for 1 minute.
Add baby corn, mangetout, peppers, cashew nuts and mushrooms, and stir-fry for 4 to 5 minutes.
Add noodles and chilli sauce and stir-fry for a further 2 minutes. Season to taste and serve immediately.
