Ingredients (11)

FILLING
1.00 black cherries — tinned and pitted
60.00 ml sugar
10.00 ml cornflour
1.00 ml cinnamon — ground
TOPPING
180.00 ml flour
20.00 ml sugar
1.00 ml Bicarbonate of soda
1.00 ml Baking powder
0.00 salt — just a pinch
15.00 ml butter — unsalted, cubed
80.00 ml Buttermilk

Method:

Preheat oven to 200 &degC. Grease a 22 cm glass baking dish.
FILLING
Place all filling ingredients in a small, heavy saucepan. Cook over a moderate heat, stirring occasionally, until sugar begins to dissolve.
Season with a pinch of salt and allow to simmer for about three minutes.
Spoon filling into prepared dish.
TOPPING
In a medium-sized bowl, whisk together flour, 10 ml sugar, bicarbonate of soda, baking powder and salt.
Rub in butter with your fingertips or a pastry-cutter until mixture resembles fine breadcrumbs.
Stir in buttermilk with a fork until just combined (do not overmix).
Drop dough into four mounds over the filling, leaving space between mounds.
Sprinkle topping with remaining sugar. Bake for about 25 minutes, until topping is golden brown and fruit is bubbling.
Cool slightly and serve warm.
