Sweet and sour tofu

    ml
    apple-cider-vinegar
  • 30
    ml
    tomato sauce
  • 15
    ml
    soya sauce
  • 125
    ml
    sugar
  • 25
    ml
    cornflour
  • 200
    g
    tofu, cut into 4cm cubes
  • sunflower oil for deep-frying
  • 3
    cloves garlic, crushed
  • 1
    small onion, sliced
  • 500

    stir-fry vegetables
 

Method

1. Sauce Mix the vinegar, tomato sauce, soya sauce, sugar and cornflour. Add 175ml boiling water. Stir and set aside.
2. Deep-fry the tofu in sunflower oil until golden. Drain on paper towels.
3. Heat 45ml sunflower oil in a wok or frying pan. Add the garlic and onion and fry for a minute. Add the vegetables and stir-fry over high heat until just cooked. Stir in the sauce and cook until it starts to thicken. Add the tofu and serve on a bed of rice or noodles.
