Sweet and sour potato salad

    potatoes, boiled in their jackets
  • 2
    stalks celery, chopped
  • 1
    small onion, finely chopped or
  • 3
    spring onions, chopped
  • 4
    rashers bacon, crisply fried and chopped
  • 15

    parsley, finely chopped
  • 2
    hard-boiled eggs, grated
  • SAUCE
  • 2
    extra-large eggs, whisked
  • 100
    g
    white sugar
  • 2
    ml
    salt
  • 1
    ml
    pepper
  • 2
    ml
    mustard powder
  • 125
    ml
    grape vinegar
  • 60
    ml
    water
 

Method

 
Peel and cube the potatoes. Add the remaining ingredients and mix. Reserve some of the grated egg to sprinkle on top. Whisk the eggs, white sugar and seasonings together and add the grape vinegar and water. Beat well. Heat over low heat, stirring continuously until the mixture thickens. Pour over the potato mixture and toss gently to moisten the salad. Sprinkle the remaining grated egg on top. Serve cold. Serves 6.
