Ingredients (13)

2.00 pork fillets
500.00 g plums
1.00 red onion
250.00 g leeks — baby
15.00 ml brown sugar
250.00 ml sherry
45.00 ml sunflower oil
15.00 ml coriander — ground
0.00 sea salt and freshly ground black pepper
MARINADE
2.00 garlic — cloves, crushed
1.00 fresh ginger — grated
1.00 lime — zest and juice
60.00 ml soy sauce

Method:

Combine the garlic, ginger, lime peel and juice, and soya sauce to make a marinade.
Trim pork with a sharp knife, place in a flat dish and sprinkle marinade over.
Chill, covered, for at least six hours but preferably overnight, turning once or twice.
Wash plums well, halve and stone them.
Peel and slice onion.
Wash leeks well, drain and chop finely.
Heat sugar in a saucepan until dissolved, then add to sherry. Cook for two to three minutes. Set aside.
Remove pork from the marinade and cut into thin strips.
Heat oil in a frying pan and brown the pork quickly on all sides to seal in the juices.
Remove from the frying pan and keep warm.
Add coriander to pan and stir-fry for one minutes.
Add onions and leeks and leftover marinade and stir-fry for three minutes.
Carefully stir pork and plums into the mixture and stir-fry for four minutes, or until meat is tender and plums are soft. Season.
Serve with fragrant rice and steamed greens.
