Sweet and sour pork

    peanut oil (or sunflower oil)
  • 1
    onion, cut into thin slices
  • 3
    garlic cloves, finely chopped
  • 10
    ml
    freshly grated ginger
  • 5
    ml
    chilli sauce
  • 500
    g
    pork fillet, cut into strips
  • 2
    large tomatoes, skinned, seeded and finely chopped
  • 1
    piece compressed tamarind pulp, soaked in hot water
  • 30
    ml
    soy sauce
  • 10
    ml
    soft brown sugar
 

Method

20 minutes
 
1. Heat oil in a wok or large frying pan over medium heat and stir-fry onions, garlic, ginger and chilli sauce for two minutes. 2. Increase heat to high, add meat in batches and fry for five minutes until browned. Stir in tomatoes and drained tamarind juice. Reduce heat and add soy sauce and sugar. Cover and simmer for 10 minutes.
