Ingredients (10)

60.00 ml peanut oil — or sunflower oil
1.00 onion — sliced
3.00 garlic — cloves, finely chopped
10.00 ml fresh ginger — freshly grated
5.00 ml chilli sauce
500.00 g pork — fillet, cut into strips
2.00 tomatoes — peeled, deseeded, finely chopped
1.00 tamarind
30.00 ml soy sauce
10.00 ml brown sugar — soft

Method:

1. Heat oil in a wok or large frying pan over medium heat and stir-fry onions, garlic, ginger and chilli sauce for two minutes.
2. Increase heat to high, add meat in batches and fry for five minutes until browned. Stir in tomatoes and drained tamarind juice. Reduce heat and add soy sauce and sugar. Cover and simmer for 10 minutes.
