Sweet and sour peppers with fusilli

Ingredients

    g
    fusilli
  • 15
    ml
    olive oil
  • 1
    clove garlic, crushed
  • 1
    red onion, finely sliced
  • 2
    red peppers, seeded and roughly chopped
  • 1
    yellow pepper, seeded and roughly chopped
  • 1
    passata
  • 500
    g
    red chilli, finely chopped
  • 30
    ml
    white wine vinegar
  • 10
    ml
    castor sugar
 

Method

Cook the pasta according to the packet instructions.
Meanwhile, heat the oil in a large saucepan and sauté the garlic and onion for two minutes.
Add the peppers and chilli and continue to sauté for five minutes.
Add the passata, vinegar and sugar, and stir until the sugar has dissolved.
Season with salt and freshly ground black pepper.
Simmer over a low heat for 15 to 20 minutes, until the peppers are tender.
If the sauce becomes too thick, add a little water from the pasta cooking water.
Drain pasta and add to sauce.
Mix well and serve immediately.
