Ingredients (8)

1.00 lime — zest only
125.00 ml lime juice
250.00 ml orange juice — freshly squeezed
60.00 ml honey
7.00 ml ginger — ground
1.00 fresh coriander — bunch, chopped
salt and freshly ground black pepper — to taste
8.00 chicken — pieces

Method:

Mix all ingredients except chicken together.
If baking, marinate chicken in mixture for at least 1 hour. Bake at 180 ºC for about 40 minutes.
If grilling, grill for 6 minutes a side without basting. Then baste with the honey mixture and turn every 5 minutes for a total of 15 to 20 minutes. (Don’t worry if the chicken skin seems to burn, the honey causes caramelisation and the skin is sweet and delicious.)
Serve with a crisp mixed salad and a baked potato, or steamed vegetables and rice or baby potatoes.
