Sweet and sour lime chicken

    lime, grated peel
  • 125
    ml
    lime juice
  • 250
    ml
    freshly squeezed orange juice
  • 60
    ml
    honey
  • 7
    ml
    ground ginger
  • 1
    bunch coriander, chopped
  • salt and milled black pepper to taste
  • 8
    chicken portions
 

Method

 
Mix all ingredients except chicken together. If baking, marinate chicken in mixture for at least 1 hour. Bake at 180 ºC for about 40 minutes. If grilling, grill for 6 minutes a side without basting. Then baste with the honey mixture and turn every 5 minutes for a total of 15 to 20 minutes. (Don't worry if the chicken skin seems to burn, the honey causes caramelisation and the skin is sweet and delicious.) Serve with a crisp mixed salad and a baked potato, or steamed vegetables and rice or baby potatoes. TOTAL KILOJOULE COUNT: 4 745 kJ (1 135 Cal). A portion: 1 185 kJ (285 Cal).
