Sweet and sour lettuce

    rashers bacon
  • 1
    onion, finely chopped
  • 50
    ml
    vinegar
  • 15
    ml
    water
  • 15
    ml
    sugar
  • 1
    extra-large egg, beaten
  • salt
  • pepper
  • 1
    head of lettuce, shredded
 

Method

 
Fry the bacon until crisp. Drain and break into pieces. Mix the onion, vinegar, water, sugar and egg. Season with salt and pepper to taste. Heat slowly, stirring continuously until the sauce comes to the boil and thickens. Place the shredded lettuce in a salad bowl and pour the sauce over it. Toss well and sprinkle with the bacon pieces. Serves 6.
