Ingredients (10)

750.00 g hake — fillet, skinned
10.00 ml turmeric
35.00 ml butter
1.00 onion — sliced
10.00 ml fresh ginger — freshly grated
1.00 lemon — zest and juice
10.00 ml soy sauce
15.00 ml brown sugar — soft
410.00 g tinned tomatoes — chopped, Mexican-flavoured
410.00 g pineapple — tinned pieces, drained

Method:

1 Rub turmeric on to fish cubes. Heat half the butter in a saucepan and fry fish pieces over medium heat for about 2 minutes. Remove and set aside.
2 Heat remaining butter in the same pan and add the onion and ginger. Fry for 2 minutes until onion is soft. Add remaining ingredients and simmer for 10 minutes.
3 Add the fish to the sauce and stir gently. Simmer for 1 to 2 minutes until fish is heated through. Season to taste and serve with rice.
