Sweet and sour fish

Ingredients

    hake fillets, skinned and cut into bite-sized pieces
  • 10
    ml
    turmeric
  • 35
    ml
    butter
  • 1
    onion, sliced
  • 10
    ml
    freshly grated ginger
  • 1
    small lemon (rind and juice)
  • 10
    ml
    soy sauce
  • 15
    ml
    soft brown sugar
  • 410
    g
    Mexican-flavoured chopped tomatoes
  • 410
    g
    pineapple pieces, drained
 

Method

15 minutes
 
1 Rub turmeric on to fish cubes. Heat half the butter in a saucepan and fry fish pieces over medium heat for about 2 minutes. Remove and set aside. 2 Heat remaining butter in the same pan and add the onion and ginger. Fry for 2 minutes until onion is soft. Add remaining ingredients and simmer for 10 minutes. 3 Add the fish to the sauce and stir gently. Simmer for 1 to 2 minutes until fish is heated through. Season to taste and serve with rice. Serves: 4-6 Preparation time: 10 minutes Cooking time:15 minutes
