Sweet-and-sour fish

Ingredients

  • 750
    g
    hake fillets
  • 10
    ml
    turmeric
  • 35
    ml
    butter
  • 1
    onion
  • 10
    ml
    freshly grated ginger
  • rind and juice of small lemon
  • 10
    ml
    soy sauce
  • 15
    ml
    soft brown sugar
  • 410
    g
    Mexican-flavoured chopped tomatoes
  • 1
    small tin/s pineapple pieces
 

Method

15 minutes
 
Rub turmeric onto fish cubes. Heat half the butter in a saucepan and fry fish pieces over medium heat for about two minutes.
Remove and set aside
Heat remaining butter in the same pan and add the onion and ginger. Fry for two minutes until onion is soft.
Add remaining ingredients and simmer for 10 minutes.
Add the fish to the sauce and stir gently. Simmer for one to two minutes until fish is heated through.
Season to taste and serve with rice.
