Sweet-Corn And Herb Fritters

    sunflower oil

    onion, finely chopped

    thawed and drained frozen sweet corn

    piquant´ peppers, finely chopped

    ground cumin

    grated Cheddar cheese

    cake flour
  • 5
    ml
    baking powder

    ml
    milk
  • 2
    large eggs, separated
  • 30

    coriander or parsley, finely chopped
  • 60
    ml
    sunflower oil, for frying
 

Method

1. Heat 30ml sunflower oil in a frying pan and saut´ the onion until soft. Transfer to a bowl and add the corn, piquant´ peppers and cumin. Allow to cool, then add the cheese, flour, baking powder, milk and egg yolks, coriander or parsley. Mix well and season to taste with salt.

2. Beat the egg whites until stiff, then fold into the mixture. Heat a thin layer of oil in a non-stick frying pan and fry teaspoons of the mixture until golden on both sides.
