Ingredients (12)

30.00 ml sunflower oil
1.00 onion — finely chopped
500.00 ml sweetcorn — frozen
10.00 piquanté peppers — finely chopped
5.00 ml cumin — ground
125.00 ml cheddar cheese — grated
140.00 g flour — cake
5.00 ml Baking powder
125.00 ml milk
2.00 eggs — large, seperated
30.00 g fresh coriander — or parsley, finely chopped
60.00 ml sunflower oil — for frying

Method:

1. Heat 30ml sunflower oil in a frying pan and saut´ the onion until soft. Transfer to a bowl and add the corn, piquant´ peppers and cumin. Allow to cool, then add the
cheese, flour, baking powder, milk and egg yolks, coriander or parsley. Mix well
and season to taste with salt.


2. Beat the egg whites until stiff, then fold into the mixture. Heat a thin layer of oil in
a non-stick frying pan and fry teaspoons of the mixture until golden on both sides.
