Sweet And Sour Vegetables

Ingredients

    peanut or sunflower oil
  • 1
    onion, cut into wedges
  • 2
    large red or yellow peppers, seeded and cut into chunks
  • 6
    courgettes, cut into chunks
  • 30
    ml
    honey
  • 30
    ml
    soya sauce
  • 30
    ml
    white wine vinegar
  • 50
    g
    peanuts
  • 150
    g
    rice or noodles, to serve
 

Method

1. Heat the oil in a large frying pan or wok. Add the onion and stir-fry for two minutes. Then add the remaining vegetables and cook for a further two minutes.

2. Combine the honey, soya sauce and vinegar and stir into the vegetables. Remove from the heat and season to taste.

3. Sprinkle with the peanuts and serve with rice or noodles.
