Sushi handrolls with turnip rice

Vegan sushi

Ingredients

  • Carrots, julienned
  • Raw nori sheets
  • A selection of sprouts
  • Turnip rice:
  • 1/4
    cup
    macadamia nuts or pinenuts
  • Red pepper, julienned
  • 3-5
    turnips, peeled
  • Avocado slices
  • Sushi handrolls:
  • Rocket leaves
  • 2
    Tbs
    lemon juice
  • 1/2
    tsp
    Himalayan rock salt
  • Turnip rice
  • Tamari sauce
  • 1
    Tbs
    olive oil
 

Method

Turnip rice:
Place all the ingredients in a food processor and blend until a rice consistency is reached.

You can make variations of this rice by using parsnips, white sweet potatoes or celeriac root.

Sushi handrolls
Place a sushi sheet down on a chopping board. Place a layer of rice on the bottom half of the sushi nori sheet. Drizzle with tamari sauce. Layer the avocado, carrots, cucumber, and red pepper. Top with sprouts and rocket leaves and roll into a handroll by tucking in both ends and slicing in half.
