    large onion, finely chopped

    medium curry powder

    strong Rooibos tea

    pineapple juice

    tomato juice

    Worcestershire sauce

  • 1
    kg
    flank
  • cake flour
  • salt
  • pepper
  • 250
    g
    bacon rashers, rind removed
  • 2
    kidneys, membranes and ducts removed and cut into quarters
 

Method

 
Heat the oil in a pan and sauté the onion gently until soft. Add the curry powder and sauté for another minute. Add the remaining ingredients and cook for five minutes. Allow to cool completely and marinate the flank in the mixture, preferably overnight. Cut the flank into 15 x 4 cm strips. Sprinkle a little cake flour over the strips of meat and flavour to taste with salt and pepper. Put a strip of bacon on each piece of meat and then place a piece of kidney on each strip. Roll up each strip of flank carefully and secure it with a sosatie stick. A twisting motion works well. Braai over medium coals until cooked or in a cast iron pan, which does not contain any oil. Serves 4-6.
