Sunshine roast vegetables

    baby carrots, washed, with stalks
  • 10
    baby parsnips, washed
  • 6
    Mediterranean potatoes, skin on, halved lengthways and halved again
  • 2
    large onions, skin on, cut into wedges
  • 750
    ml
    butternut chunks, skin on, depipped
  • 8
    cloves garlic, unpeeled
  • 30
    ml
    ginger, freshly grated
  • 30
    ml
    olive oil
  • 2
    red chillies, left whole
  • 15
    ml
    brown sugar
  • 1
    orange, juice
  • sea salt and milled pepper
 

Method

 
Preheat oven to 180 °C.
Place vegetables and garlic in a roasting pan and toss with remaining ingredients.
Use your hands to mix vegetables and coat them well.
Place in the oven and roast for 40 to 60 minutes, until vegetables are soft and golden.
Give them a good shake from time to time.
