Sun-dried tomato spread

    sun-dried tomatoes
  • 500
    ml
    water
  • 30
    ml
    olive oil
  • 2
    cloves garlic, crushed
  • 5
    ml
    finely grated lemon rind
  • 5
    ml
    dried basil
  • 2
    ml
    freshly ground black pepper
  • 65
    ml
    olives, stoned and finely chopped
  • 15
    ml
    capers, drained
 

Method

Heat the sun-dried tomatoes and water in a small saucepan and bring to the boil. Cover, reduce the heat and simmer for about 10 minutes or until the tomatoes are completely soft. Drain well and pat dry with paper towelling. Place all the ingredients in a food processor and process gently until the ingredients are well blended, but the mixture is still fairly coarse. Makes 375 ml (1 1/2 c) spread.
