Sun-dried tomato pesto

  • 150
    g
    sun-;dried tomatoes in oil, drained
  • 8
    garlic cloves, crushed
  • 100
    g
    flaked almonds, roasted
  • 1
    lemon, juice
  • 100
    ml
    freshly grated Parmesan cheese
  • 50
    ml
    oil from the sun-;dried tomatoes (you may need more)
  • salt and freshly ground black pepper
 

Method

 
Place all the ingredients in a food processor and process until smooth. Add more oil if the mixture is too thick. Makes about 375 ml pesto.
