Sun-dried tomato bread

    cake flour

    instant dry yeast

    salt
  • 10
    ml
    sugar
  • 250
    ml
    warm water
  • 1
    egg, lightly beaten
  • 60
    ml
    sun-dried tomato paste
  • 60
    ml
    olive oil
  • 125
    ml
    calamata olives, pitted and roughly chopped
 

Method

 
Preheat oven to 200 ºC. Mix the flour, yeast, salt and sugar in a large mixing bowl. Add the water, egg, sun-dried tomato paste, olive oil and olives. Knead until smooth and elastic. Cover with clingwrap and leave to rise until double its size. Knock down and shape into 2 loaves. Place on a baking tray, cover with clingwrap and leave to rise until double its size. Brush with olive oil and bake for 25 minutes.
