Summertime chicken soup

    onions, chopped

    garlic clove, crushed

    olive oil
  • 350

    baby potatoes, halved and peeled (or leave skin on)
  • 200
    g
    small leeks, washed well and sliced thickly
  • 1
    Litres
    chicken stock
  • 250
    g
    pasta of your choice
  • 125
    g
    green beans
  • 1
    bunch spinach, chopped
  • salt and milled pepper
  • 400
    g
    cooked chicken, diced
  • 60
    ml
    pesto and Parmesan cheese shavings to serve
 

Method

 
In a large pan, sauté onions and garlic in heated oil until onions are transparent. Add potatoes, leeks and chicken stock. Simmer for 15 minutes, then add pasta, beans, spinach, salt and pepper. Cook until pasta is al dente. Add chicken and heat through. Ladle soup into bowls. Serve with a dollop of pesto and garnish with Parmesan shavings.
