  • castor sugar

    bought sponge cake, cubed

    juice of oranges
  • 30

    sherry
  • 500

    mixed fresh or frozen berries, strawberries or grapes
  • 500

    mascarpone or cream cheese
  • 150
    ml
    thick cream
  • 40
    ml
    castor sugar
  • cherries, strawberries, or mint for decoration (optional)
 

Method

 
Rub the rims of six large beer or water glasses with the lemon and gently press into the caster sugar to cover. Divide the sponge cake cubes among the glasses. Mix the orange juice and sherry and pour over the cake. Divide 400 g of the fruit among the glasses and purée the rest. Beat the mascarpone and cream, sweetening with the caster sugar. Spoon on top of the fruit and finish with the purée. Decorate with fresh cherries, strawberries or a sprig of mint. Serves 6.
