Ingredients (10)

1.00 lemon
castor sugar
275.00 g cake — sponge, cubed
2.00 oranges — juice only
30.00 ml sherry
500.00 g mixed berries — fresh or frozen
500.00 g mascarpone cheese — or cream cheese
150.00 ml cream — thick
40.00 ml castor sugar
cherries — strawberries or mint, to garnish

Method:

Rub the rims of six large beer or water glasses with the lemon and gently press into the caster sugar
to cover.
Divide the sponge cake cubes among the glasses. Mix the orange juice and sherry and pour over the cake. Divide 400 g of the fruit among the glasses and purée the rest. Beat the mascarpone and cream, sweetening with the caster sugar.
Spoon on top of the fruit and finish with the purée.
Decorate with fresh cherries, strawberries or a sprig of mint.
Serves 6.
