Summer seafood kebabs

    medium prawns
  • 400
    g
    white fish, filleted and cubed
  • 200
    cherry tomatoes
  • MARINADE
  • 4
    cloves garlic
  • 5
    ml
    crushed dried chilli
  • 2
    lemons, juice
  • 2
    ml
    sugar
  • 1
    lemon, grated peel
  • 30
    ml
    each sunflower and olive oil
  • 45
    ml
    chopped fresh coriander (optional)
 

Method

 
Soak 8 wooden skewers in water for 20 minutes. Thread prawns, fish cubes and tomatoes onto skewers. MARINADE: Mix all ingredients together and pour over kebabs. If possible, marinate kebabs for at least 30 minutes. Preheat grill. Grill kebabs for 6 to 8 minutes, turning and basting frequently. Scatter extra fresh coriander over and serve.
