Summer salad

Ingredients

  • 1
    head lettuce, broken into small pieces
  • 750
    g
    cooked leg of pork or lamb, thinly sliced
  • 2
    carrots, scraped and cut into strips
  • 1
    green pepper, seeded and diced
  • DRESSING
  • 125
    ml
    plain yoghurt
  • 60
    ml
    mayonnaise
  • 15
    ml
    lemon juice
  • salt and freshly ground black pepper to taste
 

Method

 
Arrange the lettuce leaves on a pretty platter. Arrange the meat slices on the leaves with the carrot strips between them. Sprinkle with diced green pepper. Blend the dressing ingredients well and pour over the salad just before serving. Serve the remaining dressing with the salad in a separate glass bowl. Serves 6.
