Summer rice salad

Ingredients

  • 750
    ml
    cooked rice
  • 490
    g
    baked beans in tomato sauce
  • 250
    ml
    cooked peas
  • 1
    carrot, grated
  • half a green pepper, seeded and diced
  • 125
    ml
    mayonnaise
  • 50
    ml
    milk
  • few drops Tabasco sauce
  • salt and pepper to taste
  • 2
    spring onions, chopped
  • 1
    egg, hard-boiled and sliced
 

Method

 
Mix the cooked rice, baked beans in tomato sauce, peas, carrot and green pepper in large mixing bowl. Mix the mayonnaise and milk, stirring till well blended. Add the Tabasco sauce and season to taste with salt and pepper. Pour over the rice mixture, mixing well so that all the ingredients are coated with mayonnaise. Turn the mixture into a salad bowl. and sprinkle with chopped spring onion. Garnish with egg slices. Chill till needed, Serves 6.
