Summer pork burgers

    pork mince
  • 2
    onions, peeled and chopped
  • 2
    eggs
  • 100
    g
    fresh breadcrumbs
  • 15
    ml
    ground coriander
  • 5
    ml
    ground cumin
  • 6
    anchovies, chopped
  • 10
    ml
    grated lemon peel
  • 15
    ml
    Dijon mustard
  • salt
  • freshly ground black pepper
 

Method

 
Preheat oven to 200 ºC. Mix all ingredients together. Lightly shape mixture into round patties, place in an ovenproof dish and bake for 20 minutes, or until cooked through. Serve with Greek salad and grilled baby tomatoes. Serves 4-6.
