Summer pea soup

    butter
  • 4
    spring onions, trimmed and sliced
  • 400

    frozen peas
  • 15
    ml
    chopped fresh mint
  • 500
    ml
    milk
  • 125
    ml
    cream
  • salt and milled black pepper
  • 85
    ml
    finely
  • chopped sun-dried tomatoes
  • 8
    rashers rindless bacon, grilled
 

Method

 
Melt butter in saucepan, add spring onions and cook gently over low heat for 2 minutes. Add peas and mint and cook for a further 2 minutes. Remove from stove and stir in milk and cream. Blend in a food processor or blender until smooth. Season to taste. Refrigerate until cold and serve in little bowls, each garnished with a spoonful of chopped sun-dried tomato and 2 bacon rashers.
