Summer pasta with herbs

    linguine, cooked al dente
  • 250
    ml
    mangetout, blanched
  • 250
    ml
    green beans, blanched
  • 250
    ml
    baby green cabbage, quartered and blanched
  • 250
    ml
    baby marrows, shaved into ribbons and blanched
  • 16
    asparagus spears, blanched
  • 125
    ml
    readymade coriander pesto
  • 30
    ml
    Italian parsley, chopped
  • 15
    ml
    basil, chopped
  • 15
    ml
    chives, chopped
  • 125
    ml
    extra-virgin olive oil
  • 10
    ml
    grated lime zest
  • Parmesan shavings
  • salt and freshly ground black pepper
 

Method

20 minutes
 
Toss the pasta with the vegetables and mix through the pesto and herbs.
Drizzle with olive oil, and top with zest and Parmesan shavings.
Season with salt and pepper.
