Summer fish salad

    hake
  • 15

    lemon juice
  • salt
  • pepper
  • 75
    ml
    mayonnaise
  • 80

    uncooked rice
  • 75
    ml
    French dressing
  • 50
    ml
    spring onion, finely chopped
  • 2
    pineapples, peeled and cubed
  • 50
    g
    walnuts, finely chopped
  • a few lettuce leaves (optional)
 

Method

 
Season the fish with lemon juice, salt and pepper. Steam until done. Remove the bones and skin and dice fish. Blend with the mayonnaise. Boil rice until done and mix with the French dressing while still warm. Add the spring onion. Lightly mix the fish, rice, pineapple and walnuts. Line a pretty salad bowl with a few lettuce leaves and spoon the salad on top. Alternatively, serve in hollowed-out pineapple halves.
