    cake flour

    baking powder
  • 2
    ml
    salt
  • 65
    ml
    butter or margarine
  • 40
    ml
    sugar
  • 50
    ml
    golden sultanas
  • 25
    ml
    mixed glacé citrus peel
  • 50
    ml
    milk
 

Method

Preheat the oven to 220ºC and spray a baking sheet with non-stick spray or butter lightly. Sift the dry ingredients together and rub in the butter. Add the sugar, sultanas and peel. Gradually add the milk and cut in with a knife until just blended. Roll or press flat on a floured surface until about 2 cm thick. Cut out the scones, brush the tops with a little milk and bake for about 15 minutes until cooked and pale brown. Cool slightly and serve lukewarm. Makes 10 scones.
