  • MARINADE

    red wine

    brandy
  • 2
    oranges, grated rind
  • 100

    soy sauce
  • 45

    sunflower oil
  • generous pinch of brown sugar
  • 15

    fresh ginger, grated
  • ground black pepper to taste
  • GLAZE
  • 175
    ml
    brandy
  • 100
    ml
    tomato sauce
  • 100
    ml
    honey
  • 50
    ml
    brown sugar
 

Method

 
1. Stir all the marinade ingredients together in a large mixing bowl. Add the turkey joints and coat. Cover and marinade for 12 hours or more. 2. Preheat oven to 170 ºC. Drain turkey joints from marinade and arrange in two aluminium foil roasting pans. Pour 125 ml of marinade into each pan. 3. Bake for 1 hour, basting turkey pieces every 20 minutes. (If you are using two pans, rotate after 30 minutes). Increase the oven temperature to 230 ºC. 4. Stir all the glaze ingredients together in a bowl. Brush turkey pieces well with the glaze and bake for another 30 minutes, brushing and turning every 5 minutes. (If using two pans, rotate after 15 minutes.) 5. Serve turkey pieces piled on a plate with ratatouille parcels (see recipe).
