Stuffed shoulder of lamb with dried fruit

    kg
    shoulder of lamb, deboned
  • 10
    ml
    salt
  • 2
    ml
    pepper
  • STUFFING
  • 200
    g
    mixed dried fruit, finely chopped and soaked
  • 2
    cloves garlic, crushed
  • 2
    onions, finely chopped
  • 5
    ml
    lemon rind, grated
  • 10
    ml
    lemon juice
 

Method

 
Preheat the oven to 160 ºC (325 ºF). Season the meat with salt and pepper. Blend all the ingredients for the stuffing, except the lemon juice, and spread evenly over the meat. Roll up the meat and secure well with string. Place in an ovenproof dish, cover and bake for about one and a half hours or until the meat is nearly tender. Remove the lid and pour over the lemon juice. Bake uncovered until the meat is nicely browned. Slice and serve hot or cold.
