Stuffed potatoes

These potatoes are a hit, even though they’re quite decadent.

Ingredients (8)

4 potatoes — large, boiled or baked
150 g bacon — chopped
150 g bacon — chopped
1 onion — finely chopped
2 garlic — cloves, crushed
250 ml sour cream
salt and freshly ground black pepper
1 cup cheddar cheese — grated

Method:

In a large pan, fry the bacon, mushrooms, onion and garlic until
everything is golden brown and the bacon has started crisping up.
Combine the bacon mixture with the sour cream and seasoning. Cut a
slit into the potatoes and stuff some of the mixture into the potato and
cover with some of the cheese.
Place under the grill of the oven for 5-10 minutes until the cheese
has melted and the potatoes are warmed through.
