Stuffed potatoes

    medium potatoes, peeled if preferred
  • 250
    ml
    broccoli, broken into florets
  • 30
    ml
    butter
  • 65
    ml
    hot milk
  • 125
    ml
    grated Cheddar cheese
  • 5
    ml
    salt
  • freshly ground black pepper
 

Method

 
Cut a small cross on top of each potato. Place in the steamer. Fill the reservoir with 125 ml (1/2 cup) boiling water. Place the steamer on top, cover and microwave on 100 per cent power for 10 minutes. Add the broccoli and microwave for another 4 minutes. Cut each potato in half and carefully scoop out the flesh without breaking the outer edge. Mix the scooped out potato with the butter, milk, cheese and seasonings. Add the cooked broccoli, and spoon the mixture back into the potatoes. Brown lightly under the oven grill if desired and serve immediately.
