Ingredients (10)

1.00 papaya
65.00 ml olive oil — or peanut oil
2.00 ml palm oil
1.00 onion — sliced into rings
1.00 aubergine — thinly sliced
2.00 carrots — thinly sliced lengthways
4.00 okra — sliced lengthways
0.00 red pepper — deseeded and sliced
0.00 yellow pepper — sliced
salt and freshly ground black pepper — to taste

Method:

Halve pawpaw and scoop out seeds. Using a melon scoop, scoop out 8 balls.
Wrap pawpaw halves in aluminium foil and heat for 10 minutes at 120 ºC.
Heat olive oil in a frying pan and sauté onion for 5 minutes. Add all other ingredients and stir-fry for 15 to 20 minutes, adding salt and pepper to taste.
Unwrap pawpaw halves and fill with stir-fried vegetables. Top with pawpaw balls and garnish with a sprig of fresh coriander.
