Ingredients (10)

15.00 ml oil
1.00 onion — small, chopped
15.00 ml curry powder
2.00 tomatoes — finely chopped
5.00 ml white sugar
salt
freshly ground black pepper
125.00 ml mayonnaise
200.00 g prawns — drained
2.00 mango — halved, stoned

Method:

Heat oil in a pan and sauté onion until soft. Add curry powder and fry for about one minute. Add tomatoes and season to taste with salt and pepper. Simmer until a purée is formed. Liquidise and cool. Add the mayonnaise and prawns and mix well. Spoon into the mango halves.
Serves 4.
