Stuffed mango with mango bawa filling

    oil
  • 1
    small onion, finely chopped
  • 15

    curry powder
  • 2
    ripe tomatoes, finely chopped
  • 5
    ml
    white sugar
  • salt
  • pepper
  • 125
    ml
    mayonnaise
  • 200
    g
    prawns, drained, drained
  • 2
    mangoes, halved and stoned
 

Method

 
Heat oil in a pan and sauté onion until soft. Add curry powder and fry for about one minute. Add tomatoes and season to taste with salt and pepper. Simmer until a purée is formed. Liquidise and cool. Add the mayonnaise and prawns and mix well. Spoon into the mango halves. Serves 4.
