Stuffed calamari in tomato sauce

    calamari tubes

    canola oil

    spring onions, chopped
  • 1
    clove garlic, crushed

    cooked brown rice
  • 15

    freshly chopped origanum
  • salt and freshly ground white pepper
  • TOMATO SAUCE
  • 15
    ml
    margarine
  • 1
    onion, chopped
  • 1
    clove garlic, chopped
  • 410
    g
    whole peeled tomatoes
  • 30
    ml
    chopped parsley
  • 15
    ml
    chopped basil
  • salt and freshly ground black pepper
 

Method

 
1. Finely chop 1 calamari tube for the stuffing. 2. Heat the oil and sauté spring onions and garlic. Add remaining ingredients and mix well. 3. Stuff calamari tubes and secure them with toothpicks. 4. Prepare tomato sauce heat the margarine and sauté onion and garlic. Then add remaining ingredients, cover and simmer for 15 minutes or until thick. Add calamari tubes to tomato sauce. Cover and simmer for 20 minutes, until calamari is tender.
