Stuffed baked potatoes

    large potatoes, cooked
  • 20
    ml
    butter
  • 8
    rashers streaky bacon, chopped
  • 4
    spring onions, finely chopped
  • 100
    g
    mushrooms, sliced
  • 2
    cloves garlic, crushed
  • 150
    g
    mature Cheddar cheese, grated
  • 100
    ml
    sour cream
  • 15
    ml
    wholegrain mustard
  • 50
    g
    breadcrumbs
  • 45
    ml
    fresh parsley, chopped
 

Method

Slice the tops off the potatoes and scoop the flesh into a bowl, leaving a firm shell.
Mash the potato flesh with butter.
Fry bacon until crispy, add onions, mushrooms and garlic and fry for 5 more minutes.
Mix the mashed potatoes with the bacon mixture and season to taste.
Pile the mixture into the shells and place on a baking tray.
Mix together the cheese, sour cream and mustard.
Pour over the potatoes and top with breadcrumbs.
Grill for 10 minutes or until golden brown.
Sprinkle with fresh parsley and serve.
