Strawberry shortcake dessert

    butter
  • 70
    g
    icing sugar
  • 280
    g
    cake flour
  • 15
    g
    cornflour
  • 1
    ml
    salt
  • 50
    g
    ground almonds
  • 250
    g
    tub mascarpone cheese
  • 24
    fresh strawberries, halved or quartered
  • icing sugar for dusting
  • mint for garnishing
 

Method

Beat the butter and icing sugar together until well combined.
Add the sifted dry ingredients and almonds and mix well.
Knead the dough lightly until smooth.
Roll out quite thinly to fit a greased and lined Swiss roll tin and chill for 30 minutes.
Bake in a preheated 180 ºC oven for 15 to 20 minutes or until light golden.
Remove from oven and slice into eight triangles.
Allow to cool in the tray.
Spoon mascarpone cheese onto half the biscuits, add a layer of strawberries, a tablespoon of mascarpone and top with a second shortcake triangle.
Dust with icing sugar and garnish with mint.
