    baking powder

    salt
  • 30
    ml
    sugar
  • 150
    ml
    butter
  • 160
    ml
    milk
  • TOPPING
  • instant strawberry mousse
  • 250
    g
    fresh strawberries, washed
 

Method

 
Preheat the oven to 200 ºC (400 ºF). Spray a 28 x 20 cm loose-bottomed tin with non-stick spray. Sift together the cake flour, baking powder and salt. Add the sugar and grate in the butter. Rub in the butter until the mixture resembles breadcrumbs. Add just enough milk to form a stiff, manageable dough. Press the dough into the prepared tin and chill for 30 minutes. Bake the pastry crust for 15 minutes or until done and straw-coloured. Cool and remove from the tin. Allow to cool completely before adding the topping. Topping: Place the pastry layer on a pretty serving platter. Spread the strawberry mousse on it and top with the strawberries. Serve immediately. Serves 8.
